What Is Gluten?

Gluten is a group of proteins found in grains such as wheat, rye, and barley.

Why Is There a Gluten-Free Diet?

Gluten is an easily digestible protein, usually found in the gastrointestinal tract of humans, but some people are sensitive to gluten and cannot digest it. This condition is called celiac disease. Celiac should not be perceived as a disease, it should rather be considered as a food allergy. Therefore it cannot be cured with medication. Symptoms only manifest themselves when the grains are consumed. In order to lead a normal and healthy life, it is sufficient to completely remove wheat, rye and barley from one's life and to have a gluten-free diet. And that is the only solution to celiac disease. On the other hand, some people who do not have celiac disease experience some non-severe symptoms in their guts when they consume gluten-containing foods, this is called "gluten sensitivity or intolerance." These people may also, at their own discretion, want to remove gluten from their lives in order to improve their quality of life. Today, gluten is thought to be associated with fibromyalgia or many autoimmune diseases, so the number of people who want to remove gluten from their lives is increasing day by day.

Gluten-free alternatives are of great importance for this group, especially since it is not easy to create alternatives for bread, which is at the center of Turkish tables. As the Kocamaar family, we are making a start by offering a delicious gluten-free flour as an alternative to those who want to eat gluten-free. In addition to almond flour, since we do not have any production with grains yet, in fact, all of our products that are produced in our farm are “gluten-free” and can be used by people who follow a gluten-free diet with peace of mind.
