Coming from a 10 to 12 thousand-year-old, non-genetically modified seed; it is estimated that Einkorn wheat is the ancestor of all the wheat we consume today. A species from Anatolia, it is also referred to as Kastamonu Siyez, as it is mostly produced in Kastamonu today.

Einkorn wheat contains 2 times more vitamin A, high in folic acid and zinc compared to standard wheat. Since einkorn is a type of wheat, it contains gluten. Therefore, it is not suitable for people with celiac disease and gluten intolerance. However, we should add that Einkorn's gluten rate is much lower than other wheat types and it is also much easier to digest.
